Vegetable Lite

2 firm tomatoes, quartered
2 medium bell peppers, sliced up
2 medium yellow onions, sliced
sliced green onions (optional)
soy sauce (low sodium kind)
Wash and clean vegetables. Slice and mix. Mix gently, being careful not to mash up tomatoes. Mix in a wok or nonstick skillet. Add soy sauce and gently stir-fry. Remove from heat. Cool for a few minutes and pour into a serving dish.
Great eaten alone or served as a side dish.
Every time I think about where I was when I was introduced to this scrumptious recipe I can't help but smile.
