Low Fat Split Pea Soup

This is a warming and harty low fat soup recipe that you can enjoy on a winter evening.

However, if you use dry (uncooked) split peas, it may take you too long to cook. You don't want that when you return from work!

What I suggest is that you either buy pre-cooked peas, or pre-cook them yourself as indicated in my tip below.


Nutritional Information:

Serves 8

Fat: 1 g

Cal: 147

KJ: 617

WW: 2 Points

Ingredients:

4 cups of water

3 carrots

1 bag of pre-cooked green split peas

3 celery stalks

1 cup of low sodium chicken broth

100 g low fat bacon bits

1 tsp salt

This is what you do:

Mix all the above ingredients in a cooking pot, and simmer till vegies and peas are tender.

Tip: if you cannot get pre-cooked peas, make your own. Just boil half a kilo (approximately 1 pound) in 6 cups of water for about 6 hours. Let them cool and freeze.
