Low Fat Snack Recipe #2: Vanilla Ice Cream

Vanilla Ice Cream as a low fat snack recipe!?

Yup! You read that right.

... And it is... Delicious! I really like combining my low fat vanilla ice cream with Diet Coke (We call this a "low fat spider", despite the horrible connotations that arachnids bring to many people's mind. In Spanish, the Coke and Ice Cream combo is called "Vaca Negra", which means "Black Cow"). In this case, this would be a skinny black cow!

This is a clear example of simple to make low fat desserts or low fat snacks that taste good. You don't have to eat cardboard-tasting food to lose weight. You just have to cook and eat the smart way!

Ingredients:

2 tsp gelatine dissolved in 2 Tbsp hot water

300 ml chilled low fat evaporated milk

1 tsp vanilla essence

sugar-free sweetener (equivalent to 4 Tbsp sugar)

This is what you do:

Whysk all the ingredients, and pour into freezing trays.

Tips: You can eat the ice cream on its own, or toping up your favorite fruit or fruit salad. You can also freeze it in ice cube trays and have little ice cream scoops as snacks.
