Low Fat Sausage Recipes:
Tex-Mex Turkey Sausage Stew

Low fat sausage recipes are not easy to find. Read along, and you will see why.

During my research I came across the following "trivia" facts for your information... ;-)

The word "sausage" comes from the latin "salsus", which means "salted or preserved".

It appears that we've been eating these things for a long time, as historical records suggest that the Babylonians and the Chinese were already eating sausages 3,500 years ago!

Sausages were also very popular in ancient Greece and Imperial Rome. Sausages were an essential popular meal during festive seasons in both cultures.

Sausages contain high levels of fat, sodium salts, and other food additives including nitrites, nitrites, sulphur dioxide, ascorbic asid, phosphates, smoked flavour, and other additives.

Having said that, there are a few low fat sausages you can use for several low fat sausage recipes. They include reduced fat sausages (15% fat content, 85% lean), low fat sausages (8% fat content, 92% lean), chicken sausages, turkey sausages, and vegetarian (soy) sausages.

This Tex-Mex Turkey Sausage Stew is an example of the low fat sausage recipes you can cook.

Ingredients

1 cup long grain rice

1/2 tsp salt

250 g (1/2 lb) hot Italian-style Turkey Sausage (or sweet

1/3 cup low-sodium, low-fat chicken broth

1 capsicum, seeded and finely chopped

425 g can (14 oz) can stewed tomatoes

2 Jalapeņo chilies, sliced (optional but not necessary if you don't like your food to spicy)

1/2 tsp ground cumin

1/2 tsp dried oregano

1 cup frozen corn kernels


This is what you do:

Bring 2 1/4 cups of water to a boil in a saucepan.

Add the rice and 1/4 tsp of the salt. Simmer, cover and cook till the rice is tender. This will take about 15 minutes.

Spray a nonstick frying pan with cannola oil, and cook the turkey sausage over medium heat till browned (but not overcooked). Add the broth and capsicum and continue simmering till the capsicum goes tender.

Next, add the tomatoes, chilies, cumin, oregano and the rest of the salt in the pan, and bring to a boil and then simmer till the sauce thickens a bit, and the sausage is thoroughly cooked.

Finally, throw in the corn kernels and combine.

Serve 4 portions of rice, and serve the stew in 4 equal parts next to the rice.
