Low Fat Salad Recipe #7:
Nicoise Salad

With just 5 Weight Watchers' points, the Nicoice Salad qualifies as a delicious low fat salad recipe that you should try at least once in your life!

And this recipe can also be a good conversation topic during a gathering with your family and friends.

According to Ask Jeeves, Nicoise salad is called so because:

"Nicoise is a descriptive term for dishes served with particular foods used by the chefs of the City of Nice, France.

This garnish usually includes garlic, tomatoes, anchovies, black olive, capers, and lemon juice.

Salad Nicoise is the most famous of all these dishes, consisting of potatoes, olives, green beans, and vinaigrette dressing.

Even its "proper" assembly is disputed. Some people say the salad is served on a bed of lettuce and others say that tomatoes are the base.

And some don't arrange the elements of the salad at all, but just toss it all together."

So, there you are, folks! That was a bit of educational information about the food we eat.

When you prepare a Nicoise low fat salad recipe, you substitute its traditional fattening ingredients for low-fat ingredients without sacrificing too much of the traditional flavour.

Of course, a fat saturated salad will taste a bit different to a low fat salad recipe. But if you are trying to lose weight, that's what you have to do.

Having said that, there are those who reckon that having a "Mediterranean" diet (full of olive oil, wine, and other "good fat")... but that is not part of my plan.

Nutritional Information:

WW: 5 Pts

Ingredients:

200 g green beans

250 g cherry tomatoes

1/2 cup black olives

2 Lebanese cucumbers

1 red onion

150 g mesclun

6 hard-boiled egs

A 425 g can of tuna in brine

For the Dressing:

1 tsp olive oil

1/4 cup lemon juice

1/2 tsp crushed garlic

2 tsps dijon mustard

This is what you do:

Boil the beans till tender; rinse under cold water and drain.

In a bowl, mix the dressing ingredients. Set aside the dressing.

Trim the beans, halve the tomatoes, slice the cucumbers and onion, and dice the eggs. ;-)

Place the tomatoe, olives, cucumber, onion, mesclun and egg in a large salad bowl with the dressing. Toss and combine evenly.

I hope you're ready for a party in your taste buds!
