With just 5 Weight Watchers' points, the Nicoice Salad qualifies as a delicious low fat salad recipe that you should try at least once in your life! And this recipe can also be a good conversation topic during a gathering with your family and friends. According to Ask Jeeves, Nicoise salad is called so because: "Nicoise is a descriptive term for dishes served with particular foods used by the chefs of the City of Nice, France. So, there you are, folks! That was a bit of educational information about the food we eat. When you prepare a Nicoise low fat salad recipe, you substitute its traditional fattening ingredients for low-fat ingredients without sacrificing too much of the traditional flavour. Of course, a fat saturated salad will taste a bit different to a low fat salad recipe. But if you are trying to lose weight, that's what you have to do. Having said that, there are those who reckon that having a "Mediterranean" diet (full of olive oil, wine, and other "good fat")... but that is not part of my plan.

For the Dressing:
This is what you do: Boil the beans till tender; rinse under cold water and drain. In a bowl, mix the dressing ingredients. Set aside the dressing. Trim the beans, halve the tomatoes, slice the cucumbers and onion, and dice the eggs. ;-) Place the tomatoe, olives, cucumber, onion, mesclun and egg in a large salad bowl with the dressing. Toss and combine evenly. I hope you're ready for a party in your taste buds!
