Salad Nicoise is the most famous of all these dishes, consisting of potatoes, olives, green beans, and vinaigrette dressing. Even its "proper" assembly is disputed. Some people say the salad is served on a bed of lettuce and others say that tomatoes are the base. And some don't arrange the elements of the salad at all, but just toss it all together." When you prepare a low fat Nicoise salad recipe, you substitute its traditional fattening ingredients for low-fat ingredients without sacrificing too much of the traditional flavor. Nutritional Information: | Serves 4 Fat: 11.1 g Cal: 269 KJ: 1128 WW: 5 Pts | Ingredients: 200 g green beans 250 g cherry tomatoes 1/2 cup black olives 2 Lebanese cucumbers 1 red onion 150 g mesclun 6 hard-boiled egs 425 g can of tuna in brine For the Dressing: 1 tsp olive oil 1/4 cup lemon juice 1/2 tsp crushed garlic 2 tsp Dijon mustard This is what you do: Boil the beans till tender; rinse under cold water and drain. In a bowl, mix the dressing ingredients. Set aside the dressing. Trim the beans, halve the tomatoes, slice the cucumbers and onion, and dice the eggs. ;-) Place the tomatoes, olives, cucumber, onion, mesclun and egg in a large salad bowl with the dressing.
