Bamboo shoots in a low fat salad recipe? A good many years ago, I would have discarded the idea as being foolish. That was then. After I came to Australia and tasted different Asian dishes containing bamboo, I became more receptive to the idea. There was only the problem of the fat content in the dishes I tried. After I did some research looking for an appropriate low fat salad recipe, I found it! Here it is:
Ingredients:
This is what you do: Drain the bamboo shoots and slice them. In a nonstick frying pan, toast the rice till golden. Mix the rice, shallots, garlic, spring onions, fish sauce, lime juice, granulated sugar, chillies and part of the mint leaves (half will do) in a bowl. Pour the dressing onto the bamboo shoots and toss the salad evenly. Sprinkle sesame seeds the mint over it.
