This is another delicious low fat lunch recipe you can have for lunch... or for a quick dinner. You decide. "Where is the meat?" you ask.... Well, as the title implies, this is a vegetarian sandwich... a totally allien concept for me a couple of years ago. But it is a great recipe for a change. I mean, the typical ham and cheese sandwich can get boring... even if you change it to salami and cheese sandwich... Boring! With this low fat lunch recipe you give your taste buds a treat of flavours from the yogurt, mayo, chutney, lime juice, honey, and curry powder. What a nice combination! This is a very straight forward recipe to prepare, but you still need cooking a few ingredients. Enjoy!
Ingredients:
This is what you do: Slice the capsicums (peppers), red onion, cheese and tomato. Mix the yogurt, mayo, chutney, lime juice, honey, and curry powder. Set aside (put it in the fridge for the time being). In a nonstick fry pan, heat oil, and add the peppers and red onion, stirring constantly till they go very soft. Preheat the grill (broiler), place the bread slices on a baking tray, and spread the chutney mix over each slice. Top with capsicum (onion), cheese and tomatoes, and grill them (broil them) till the cheese melts and goes bubbly.
