I think this egg salad sandwich is one of the easiest low fat lunch recipes you can find. It's delicious, and low in fat.
Ingredients:
This is what you do: Combine eggs, onion, celery, bacon, mayo, parsley, mustard and horseradish. Top each slice of bread with 1 lettuce leaf, 1/2 of the egg mixture and 1 tomato wedge. Nice and easy... and delicious!
