Low Fat Frittata:
Red Pepper, Onion and Potato Frittata

This colorful low fat frittata recipe will make you start your day in a happy mode.

Although it is a quick low fat recipe to prepare, I eat this type of meal on a day when I do not have to go to work, as I don't like leaving home to work "too full" early in the morning.

Yet, there are those lucky enough who do not have to worry about commuting to work every day, you can perfectly have this low fat breakfast recipe on a daily basis if you wish.

One of the best reasons for indulging with this recipe is that it keeps you going for quite a while, as it is not simply eggs, but it comes with a small variety of greens.

Ingredients:

1 Tbsp olive oil
2 medium red bell peppers (capsicums), cored and sliced
1 onion, diced.
1/2 cup minced fresh basil
1 Tbsp minced garlic cloves
4 eggs
3 egg whites
1/4 cup skim milk
1/2 tsp salt
1/4 tsp ground black pepper
1/2 kg (1 pound) cooked potatoes, sliced
1/2 cup low fat Parmesan cheese, grated

This is what you do:

In large nonstick pan, spray cannola oil, and add the capsicums and onion, cooking over low heat stirring frequently till the veggies go tender.

Add basil and garlic and keep cooking and stirring till the mixture is thoroughly combined and cooked. Remove from heat.

Preheat your grill.

In a medium bowl, whisk the eggs and egg whites, milk, salt and pepper, and set aside.

Add the potatoes to the vegetable mixture (not the egg mixture, but the veggies mix), and toss to combine.

Add the oil and toss the veggie mix again, and then pour the egg mixture over the veggie mixture.

Stir quickly and gently until well mixed, and cook on medium heat for about 10 minutes (or till the egg's edges are set).

Remove from the heat and sprinkle evenly with the cheese.

Remove from the pan, and spray an oven proof tray. Transfer the cooked mixture onto it and grill close to heat for about a minute (or till the top is set).

Remove from heat, and cut the low fat frittata into 4 equal portions. Serve warm.
