Low Fat Dinner Recipe #3: Savory Sausage Stew

This is one of the low fat dinner recipes that I consider ideal for a winter evening.

Sausages are normally very high in fat, but this recipe uses turkey sausages, which are relatively low in fat (compared to other types of sausages).

This is what I call a "moderately lite low fat dinner recipe".

Considering that under the Weight Watcher's Points System (TM) a woman is supposed to consume 22 points per day, and a man 24 points per day to lose weight, 5 points is not a biggie. Yet, it is about 20% to 25% of your allowed daily intake.

But that depends on what you eat for breakfast and for lunch.

During my peak performance under WW, I used to have 1/2 a point for breakfast, plus one point in skinny white coffee.

Now a days, however, I'm consuming about 5 points for breakfast and I still manage to lose a bit of weight by walking regularly.

Now, you may make this meal an 8 pointer. Just add a cup of steamed rice (2 pts), and 10 rice crackers (1 pt), and you have a complete meal for dinner. And you could even be good to yourself and add a low fat salad recipe for a truly healthy and fat melting meal.

Ingredients:

Cannola oil spray

400 g italian style turkey sausage.

2 chopped onions

1 peeled and chopped turnip

1 sliced carrot

1 sliced celery stick

4 red potatoes, diced

1 cup chicken stock

1 bay leaf

1/2 tsp dried thyme

1/4 tsp dried sage

1/4 tsp freshly ground pepper

1/2 small head green cabbage (cut in 4 wedges)

1 tsp flour, disolved in 1 Tbsp cold water

1/4 cup minced parsley

2 tsp cider vinegar

This is what you do:

Spray cannola oil in a nonstick frying pan.

Add the sausage, onions, turnip, carrot, and celery, and cook, breaking the sausage apart.

Stir in the potatoes, stock, bay leaf, thyme, sage, and pepper, and bring to boil.

Place the cabbage over the stew, cover and simmer till the cabbage is tender.

Transfer the cabbage to a serving bowl.

Stir the dissolved flour into the stew, and simmer. Stir till the liquid goes thick.

Transfer the sausage and veggies to a serving bowl.

Get rid of the bay leaf.

Add the parsley and vinegar into the thickened sauce, and pour over the sausage and veggies.
