Low Fat Dinner Recipe #11: Roasted Potatoes With Rosemary

low fat dinner

You can have this delicious low fat dinner recipe on its own, or you can add some low fat sour cream or natural yoghurt.

You could also dress the potatoes with sweet chilli sauce. Of course, you have to take into account the amount of fat and kilo joules of whatever you add on.

With only 2 WW pts per serving, you could even afford to have this delicious dish with some sort of grilled fish or chicken.

Remember: you have to keep tracking your points, or counting your calories and amounts of fat you consume on a daily basis for you to be able to lose weight without starving.

But if you're not in the weight loss path, you don't have to do a thing, especially if you are blessed with naturally slender genes.

For the rest of us mortals, watching what we eat on a regular basis is the key to keeping ourselves trim... and beautiful. ;-)

Nutritional Information:

Serves 4

Fat: 0.9 g

Cal: 133

KJ: 555

WW: 2 Points

Ingredients:

4 Medium Gourmet Potatoes

Cannola Oil Spray

Sea Salt

Ground Black Pepper

1 Tbsp Rosemary Springs

This is what you do:

If you want to complete this recipe within half an hour, you should "nuke" your potatoes in a microwave. Of course, you may decide to go "the natural way" (boiling them first and then roasting them), but that will delay you for an hour.

So, if you want to prepare this low fat dinner recipe within 30 minutes, you will be better off "nuking" the spuds.

After that, you should finelly cut the potatoes 2/3 of the way, as shown in the above picture. Keep the skin on, as this adds texture and vitamins to your meal.

Spray some oil on a baking tray, and place the potatoes in there.

Next, mix the salt, rosemary and pepper and sprinkle over the cut potatoes.

Spray the cannola oil on the potatoes, and chuck them into the oven at about 180 C (approximately 356 F) for about 30 minutes (or till the potatoes are crispy).
