Low Fat Dinner Recipe:
Buttermilk Mashed Potatoes

This low fat dinner recipe uses "buttermilk", which is a liquid left over after making butter. It now comes in low fat form.

The good thing about buttermilk is that it makes your meals "buttery", but without the fat or calories of butter itself.

Although this is a low fat recipe, it is also high in carbs. So, stay away from this delicious side dish if you're following Atkin's diet (or any other carbs restricted dietary regime).

If, on the other hand, you're following a "middle path" healthy eating program, you can have this recipe with a protein high (and low in fat) main dish (like broiled chicken, or roast beef, or even grilled fish).

...And don't forget including a salad.

Nutritional Information

Ingredients:

1 kg (2.5 pounds) of gourmet potatoes

4 crushed garlic cloves

1/2 cup low fat buttermilk

1/4 cup low fat sour cream

1 Tbsp white horseradish

1 Tbsp chopped fresh parsley

1/2 tsp salt

1/4 tsp ground black pepper

This is what you do:

Cook the potatoes and garlic in a large saucepan with salted water. Boil till the potatoes are tender. Then drain the water, keeping 4 Tbsp of the water.

Put the potatoes, garlic, and 2 Tbsp of the cooking water, and mash with an electric mixer. (add the rest of the water if you want the mashed potatoes softer).

Add the buttermilk, sourcream, horseradish, parsley, salt and pepper, and beat the mashed potatoes till the mixture goes smooth.

This delicious low fat dinner recipe is great as a meal on its own, or as a side dish with another low fat recipe meal.
