Low Fat Dessert Recipe:
Baked Ricotta with Mandarin Sauce

You'll be happy to see that this low fat dessert recipe does not contain bananas at all! Yet, it is one of my favorite low fat dessert recipes.

I got this recipe from one of my favorite Weight Watchers' recipe books which, unfortunately did not come with the breakdown of nutritional information.

However, if you're into Weight Watchers, it'll be sufficient for you to know that each serving is worth 3 pts.

If you're not allergic to dairy products, low fat ricotta cheese is one of the best ingredients you can use for baking or cooking low fat desserts.

This one is very nice once it's cooled down. The mandarin makes it tangy and almost "cheesecake-like".

Ingredients:

3 tablespoons of brown sugar

300 g low fat ricotta cheese

2 tablespoons of caster sugar

2 eggs

1 tablespoon of finely grated lemon rind

30 g sultanas/raisins

1 tablespoon of lemon juice

This is what you do:

You'll need to preheat your oven to 180 Centigrades (356 F).

Coat a baking tray with cooking spray.

Separate the egg yolks and egg whites.

Mix the ricotta, 1 tablespoon of sugar, and the egg yolks till smooth. Add the sultanas.

Beat the egg whites till foamy, and pour into the ricotta mixture.

Pour the mix into the baking tray for about 40 minutes.

To prepare the mandarin sauce, you do this:

Mix the mandarin, 2 tablespoons of suggar and lemon juice.

Cook the mix in a small pan for about 3 minutes while stirring.

Once the ricotta bake is ready, let it cool down for a little while and cut into 6 wedges of equal size. Serve with the mandaring sauce and enjoy.
