Why does everyone assume low fat dessert doesn't exist? Ricotta is a great low fat cheese and I'm sure you'll enjoy this ricotta based weight watcher dessert recipe. If you don't like passionfruit, you can substitute it for other fruits, like peach, mandarines or my favorites: strawberries. You'll need a muffin pan
Ingredients: 500 g low fat ricotta cheese 3 tablespoons of castor sugar 1 tablespoon of plain flour 1 teaspoon of grated orange zest 2 tablespoons of orange juice 1 egg 1/2 cup of cream 2 passionfruit This is what you do: You've got to preheat your oven to 160 Centigrades (320 F). Combine the ricotta chees, castor sugar, flour, orange zest, juice and egg in a mixing bowl till smooth. Coat an 8-muffin tray with cooking spray, and pour the mixture evenly into the 8 muffin holes. Bake the muffins for about 15 minutes (or till firm). Let them cool down, and remove them from the tray.
To do the passionfruit cream you just whisk the cream and combine it with the passionfruit. Pour the cream on each muffin/cake, and enjoy! 8 servings
