This low fat cookie recipe is simple, sweet and easy to prepare. These apple and oatmeal cookies are the right snack to have with a nice apple and cinnamon tea. Well... some people have a thing about coffee (and they're right), but that's one of the addictions I have not decided to abandon yet. (Yes! I confess! I like my apple and oatmeal cookies with coffee and skim milk!). ... I'm only human! ;-)
Ingredients:
This is what you do: Preheat oven to 180 C (350F). Spray 2 baking sheets with In a large bowl, mix the oats, flour, cinnamon, baking soda In another bowl, whip the brown sugar together with the low fat spread till the mixture goes light and fluffy; Next, add the grated apple, egg and vanilla extract, and beat until well blended. Add the oat mixture to the egg and apple blend, mix well, and add the raisins. With an ice cream scoop, spoon the dough and drop onto the baking sheets forming 24 equal cookies and leaving 2 inches distance between each cookie. Now flatten each cookie with spatula, and bake in center of middle oven rack 12-15 minutes, until the low fat apple and oat cookies go lightly browned. When ready, transfer your apple and oatmeal low fat cookies to a cooling rack. You can store this delicious low fat cookies in a sealable container when they're cool.
