Low Fat Chicken Florentine Soup
Low fat chicken florentine soup for one person!?
Why, of course! You don't always have to cook for a whole lot of people! You may want to have a quiet time by yourself enjoying a hot cup of low fat soup.
This may not be a good meal for summer, but nice in autumn (fall), winter, and even spring.

Ingredients:
1/2 large chicken breast, skinless
1/4 onion, finely chopped
1 tsp fresh basil leaves
1 small an of tomatoes
1 1/2 cup of low fat chicken broth (if you are a diabetic, check that it's low in sodium too)
1 cup of frozen spinach
1 bay leaf
1/4 cup quick cooking rice, or 1/4 cup of steamed rice
Pepper to taste
This is what you do:
Dice the chicken, and toas it with the onion in a microwave safe casserole tray.
Add the pepper and basil and cover the casserole with plastic wrap, and "nuke" it in your microwave on high for about 5 minutes (turning the chicken over half way).
Add the tomatoes, chicken broth, spinach, bay leaf and rice, and cover with the plastic wrap again. This time, you'll microwave it on high for about 9 minutes, stirring once or twice during the "nuking" process.
Allow the soup to sit for about 3 minutes, and it'll be ready to eat.
