Healthy Deep Fried Dish: Egg Foo Yong
Egg Foo Yong is one of many healthy deep fried dishes found in the Chinese Vegetarian Cookbook.
Basically, this is the Chinese version of our omelets and fritattas. Should they be called "Chinese Fritatta" then? Hmmm, that's a thought!
This is what I call a "base recipe" (just like the basic fritatta), as you can build up from the basic recipe into tastier and more sophisticated dishes.

Ingredients:
4 eggs
1 cup of bean sprouts
5 mushrooms, sliced
1 tsp sugar
1/2 tsp ground black pepper
1 green onion, chopped
4 Tbsp flour
Cannola oil spray
This is what you do
Beat the eggs weal.
Add the flour, salt, sugar, pepper and mix well.
Add the sprouts, chopped onion, and mushrooms and mix well again.
Spray a non-stick frying pan with the cannola oil, and pour the egg and vegies mix onto it.
Fry one side of the omelet, and turn over with a spatula.
Divide into 4 equal portions, and enjoy.
You can add whatever you want to this basic recipe and make up your own.
Not bad for a "deep fried" dish, huh?
When I first saw the title of this chapter in Jim's book, I was a bit concerned because - by definition - "deep fried" equals unhealthy.
And, to be fair, there are a couple of recipes in the book that you would not want to have everyday if you're watching what you eat.
But using a bit of common sense, and some flexibility, you'll find many recipes you can have as a treat, and which you could not possibly get away with in a Chinese restaurant.
