Fruit Soup... Yippie!

"Fruit soup!? You're joking!"

I think I mentioned somewhere else in this site how much I used to hate having soup when I was a kid. It was not so much the flavour, it was the fact that my parents believe in eating the damn thing piping hot!

The vegies were scorching, and the meats were to freaking hot. On top of that, my mum had (has) this belief that you don't have cold drinks when you have soup because it can give you the runners! So, there I was, forced to have melted metal for lunch or dinner, and not allowed to have something to cool down my mouth burns with!

Sorry to share my psychoanalysis here with you! But that just illustrates why kids don't often like soup... This low fat recipe will be an exception. I promise!

Made with fruit, and completely chilled, and on top of that... sweet, there is no way a youngster will object to this fruit soup! And if you're smart enough, you won't even tell them it is a soup, but a treat or a dessert. Honest! You can call it whatever you want. It is simply delicious. Try it, and let me know how you liked it.

When your kids liked the this low fat recipe, prepare them the Chilled Srawberry Soup and they'll love you for it.

Nutritional Information

Serves 6

Fat: < 1g

WW: 3.5 Points

Ingredients:

2 cups of apple juice (no sugar added)

2 cups of real orange juice (not artificial or reconstituted)

1 cup of dried apricots

1/2 cup of dried apples

1/2 cup sultanas/raisins

1 pice of cinnamon stick

4 cardamon pods

1/2 cup sago

1/2 cup low fat yoghurt

1/2 tsp finely grated orange rind

This is what you do:

Put the juices, fruit, spices and sago in a large pan and leave it soaking for 1 hour.

After that, boil the mixture, and then simmer for about 15 minutes. Remove the cinnamon and cardamon.

Cool down, and then refrigerate for 2 hours.

Serve it cold, with a tablespoon of low fat yoghurt and a bit of orange rind on top.

That's it! The Scandinavian Fruit Soup is one of the kids' favourites (and taking into account that there are not many soups they actually like, that is something!).
