Fresh Salsa

One of the greatest destroyers of diets are the sauces that we smother healthy food in.

Think about it for a minute. You make a nice, healthy spinach salad, loaded with all the right vegetables, and then pour ranch dressing all over it.

You might as well go to McDonald's.

Instead, start to choose the right spreads and sauces to keep your healthy meals healthy.

Here is a great recipe for homemade salsa that is low in sugar and has almost no fat in it.

Ingredients:

3 large tomatoes, peeled and diced
1/2 cup white onion, chopped fine
1/2 jalopeno pepper, chopped
1 Anaheim pepper, seeded and chopped
1/2 sweet red pepper, chopped
2 tbsp. cilantro, chopped
Fresh juice from 1/2 lime
1 tsp. white wine vinegar
1 tbsp. water or tomato juice

Place the tomatoes in a colander to reduce the tomato liquid while you prepare the rest of the ingredients. Place a bowl under the colander if you want to collect the tomato juice.

Put all the ingredients in a glass, ceramic or stainless steel bowl. Mix well and let stand for 30 minutes. Serve salsa with baked tortillas, lean meats or other main dishes.
