Broccoli with Creamy Mustard Sauce
Who said vegetables are boring!?
This is the kind of delicious low fat dinner recipe that proves that statement wrong.
You can use this low fat sauce not only for veggies, but with any other meal you want (eg chicken, seafood, and any other veggies).

Ingredients:
- 500 g broccoli florets
- 1.5 Tbsp low fat margarine ("I can't believe is not butter" is a good choice)
- 2 Tbsp flour
- 1/2 cup skim milk
- 1/2 cup chicken broth
- 3/4 cupshredded low fat Cheddar cheese
- 1.5 Tbsp Dijon mustard
- 1 Tbsp chopped fresh parsley
- 1/4 tsp paprika
- a pinch of ground white pepper
This is what you do:
Steam the broccoli florets for about 10 minutes (or till tender)
Melt the low fat butter in a small saucepan, and stir in the flour (stirring constantly) for a minute or so.
Stir in the milk and broth, and keep on cooking and stirring constantly till the sauce boils and thickens.
Gradually stir in cheese, mustard, parsley, paprika and pepper.
Pour the cheese sauce over the steemed broccoli... yum!
