Awesome Snickerdoodle Recipe

This snickerdoodle recipe has been one of my favorites since I was a little boy. It seems to be the one cookie that I can never get enough of.
Mom created a light version of this recipe that cuts back on sugar and replaces butter with applesauce. The best part is that they still taste great!
Ingredients:
1/2 cup butter
1/2 cup applesauce
1 cup sugar
1 cup brown sugar
3 eggs
1 1/2 teaspoons vanilla
1 teaspoon salt
1 1/2 teaspoons baking soda
3 teaspoons cream of tartar
5 cups flour
Cinnamon Sugar Mixture:
In a small bowl mix 1/2 cup of sugar with 1 teaspoon of cinnamon.
Directions:
Preheat oven to 375°F.
Cream together the butter, applesauce, and both sugars. Beat in the eggs and vanilla. Add the dry ingredients and mix well. Roll the dough into 1 inch balls and roll them in the cinnamon sugar. Place the balls on a greased cookie sheet and bake in the oven for 8 - 10 minutes (remove from oven while still puffy). If you make larger balls, flatten them slightly before putting them in the oven.
